Colin就已經成立，當時是一家微型酒商，Simon從其他種植者手中購買葡萄和果汁，自己少量生產葡萄酒。釀酒都在車庫大小般的空間完成，設備非常簡單，首釀年份也只有9桶，Simon在此階段稱之為「實驗室」。他想用自己的品牌來做測試，釀造出他認為的現代風格葡萄酒。在酒窖中，不僅能看到傳統228、350公升的橡木桶，還有蛋形水泥槽和小的玻璃容器，這些都是Simon有著試驗好奇心的最佳證明。\u003c\/p\u003e\n\u003cp\u003eSimon從商學院畢業之後，2014年至2017年跟隨著父親，在布根地與父親購買的南非酒莊Topiary Wine Estate一同工作，隨後又在Puligny村的白酒名莊Domaine Etienne Sauzet接受更扎實的訓練，並在其影響之下，Domaine Simon
