Cottage的葡萄園位在中奧塔哥的比薩山麓，酒莊占地24公頃，其中絕大部分反倒不是用來栽種葡萄，而是建立起與環境共生共榮的生態圈。整個酒莊彷彿與世隔絕的人間仙境，隱世樂土，高山形成最佳的屏障，隔絕冷風的襲擊，碗型的地形，類似古代雅典的圓形劇場。更讓日照的能量保留在莊園內。所有的葡萄園都各自獨立，不與其他酒莊的葡萄園接壤，更使得酒莊所建立的生態系統得以最有效的運作，免受其他酒莊的影響。\u003c\/p\u003e\n\u003cp\u003e當酒莊在2002年建立時，第一件事情就是飼養了許多頭綿羊，高山乳牛，雞隻。飼養蜜蜂，種植多樣化的紐西蘭原生植物。對酒莊而言第一件事不是栽種葡萄，而是透過與多種動植物的共生，培養起生態圈，花時間建立多個生物動力法的堆肥。實際作為葡萄園的面積，連酒莊總面積的一半都不到。直到2009年才推出第一個年份。\u003c\/p\u003e\n\u003cp\u003e究竟是怎樣的莊主，能有一股傻勁，堅持這樣的釀造哲學呢？答案是Marquis Sauvage先生。 Sauvage家族在美國擁有多間公司與葡萄酒相關事業，也是德國Pfalz地區著名的Koehler Ruprecht酒莊的所有者。\u003c\/p\u003e\n\u003cp\u003e憑藉對葡萄酒的充分了解，Marquis與妻子 Dianne很早便決定，維持原始天然地貌的紐西蘭正是他們夢想的天堂，經過走訪南北島各地，終於發現中奧塔哥的Burn Cottage 位址，有得天獨厚的地理優勢。\u003c\/p\u003e\n\u003cp\u003e酒莊另外兩位靈魂人物，其一就是知名的前釀酒師Ted Lemon。1981年在法國知名的第戎大學獲得釀酒學位，1982年成為梅索名莊Guy Roulot的釀酒顧問，成為法國布根地史上第一位美國籍釀酒師。2002年時，接受好友Marquis Sauvage的熱情邀約，成為Burn Cottage的首位釀酒師。其二即現任首席釀酒師Claire Mulhollande，她承襲了Ted Lemon的精隨並精益求精，她描述道 : 「釀酒的本質並非展現釀酒師的技藝，而是呈現風土之美。」這份謙遜的態度，充分表達了她對大自然的敬畏與尊重，也讓她的酒款得以忠實呈現產區獨一無二的風味。\u003c\/p\u003e\n\u003cp\u003e在Marquis與兩位釀酒師的哲學裡，葡萄酒不是用葡萄釀的，而是由葡萄所生長的土壤而決定。風土是最偉大的指導者，所以配合葡萄園的土壤與地形，坡度，選擇栽種多種不同的Clone與砧木。透過最小程度的人為干預，最大程度地反映土壤的特色，更堆疊出極為精彩的複雜度。因此釀造時，盡可能降低硫化物的使用，不使用任何添加劑，不使用商用酵母，不進行過濾，完全遵照月亮曆法照料葡萄園。酒莊的年總產量僅有5000箱。\u003c\/p\u003e\n\u003cp\u003e於首釀後沒多久連續於2014、2015兩年份皆獲得“Fine Wines of New Zealand” 評為紐西蘭最佳黑皮諾的殊榮。近幾年也連續榮獲《The Real
