Sato(佐藤公子)共同創立於2009年，一開始的年總產量僅190箱的黑皮諾，後來陸續增加，到2016年時，年總產量約為1700箱，在當地仍舊維持精品酒莊規模，目前只有10個國家可以獲得Sato先生的配額。\u003cbr\u003e\u003cbr\u003e夫妻倆在1998年認識，當時兩人都任職於日本的銀行業。Sato先生歷經12年在日本與倫敦的外派之後，對於葡萄酒有更深的認識與熱愛，所以兩人決心於2006年時移居紐西蘭，以成為釀酒人為目標。共同進入知名的基督城林肯大學，攻讀葡萄栽培和釀造。\u003cbr\u003e\u003cbr\u003e畢業後，曾在當地知名酒莊Felton Road負責管理葡萄園與酒窖約2.5年，之後到Mount Edward擔任釀酒師達4年。2012年時辭去原本的釀酒師工作專心在Sato酒莊，同時兼任位在附近Cromwell鎮的Rockburn酒莊的有機企作酒農，以便同時使用Rockburn的酒窖進行釀造與培養。\u003cbr\u003e\u003cbr\u003e兩夫妻也累積非常多的舊世界的學習經驗。Sato先生曾至Bernhard Huber、Domaine Matassa、Jean-Yves Bizot與Jean-Pierre Frick學習。Kyoko曾跟隨多位自然派的巨匠，包括Philippe Pacalet，Julien Guillot ，Christian Binner等學習。目前仍舊同時兼任Felton Road的顧問職。\u003cbr\u003e\u003cbr\u003e酒莊的葡萄園管理與釀酒哲學都是崇尚自然，完全有機，持續轉換為生物動力法。釀造時盡可能減少人為干預，培養最健康的葡萄果實，重視自然的微生物平衡，引導出風土原本的風味，發揮出Central Otago冷涼的大陸型氣候特徵，不論任何品種，都在日本夫妻的職人精神下，得到媲美舊世界的超高水準。Jancis Robinson的著作The World Atlas of Wine 7th Edition也將Sato列為Central Otago的代表酒莊。\u003c\/p\u003e\n\u003cul\u003e\n\u003cli\u003ePinot Noir\u003cbr\u003eSato酒莊的黑皮諾來自兩個葡萄園。“Pisa Terrace Vineyard” 2002年種植，密度4,500株\/公頃，位在Pisa山腳下的有機葡萄園。葡萄園覆蓋著非常薄的表層土壤，由排水良好的礫土，灰礫岩，片岩和石英組成。 於2012年通過Biogro（新西蘭最嚴格的有機認證機構）認證。這是自2009年以來就與Sato合作的葡萄園。 “Northburn Vineyard” 從2014年生產，西北面向葡萄園，頁岩和石英的沖積土壤形成。
